Homemade pesto vinaigrette recipe

For two lucky people…




For the pesto

  • One or two bunches of fresh basil (stems removed)

  • 2 cloves of garlic

  • 1/2 cup toasted pine nuts

  • 1/2 cup grated nice quality aged Parmesan

  • Plenty of olive oil

  • Salt & pepper to taste - A squeeze of lemon will help keep the basil bright green!

For the Vinaigrette

  • 1 tbs. of pesto

  • 2 tbs. Chardonnay vinegar

  • 6 tbs. olive oil (I f you feel you the vinaigrette mixture is too thick for your liking add more oil).




For the pesto

Add all of the Pesto ingriedents into the food processor and pulse. Add olive oil a little at a time until the pesto is the consistency that your require.

For the vinaigrette

In a small bowl whisk the vinaigrette ingridents together


Store the pesto and vinairgrette sepratly in jars in the fridge until your ready to use them.
