We are looking forward to the easing of lockdowns and catching up with friends and family outdoors. Despite the sun shining, we all know it can be rather chilly, so here’s were out Carrot, and Tarragon soup comes in. A delicious, quick and easy soup for outdoor catch-ups.
This recipe serves 6 people (so why not prepare a flask for someone else).
Ingredients
150g unsalted butter
150g sliced onions
2 crushed garlic cloves
500g carrots. Peeled and thinly sliced
500ml carrot juice
75ml white wine
6 sprigs picked tarragon
3g salt
Sherry vinegar to taste
How to?

Start off by slowly cooking your onions, garlic, carrots, salt in 50g of butter for 5 mins until soft, over a low medium heat.

Add your white wine and increase the heat until evaporated

Add the carrot juice, lower heat and simmer for around 25 minutes.

Blend the mixture, adding the remaining butter and picked tarragon until smooth

Pass through a fine sieve.

If you should require a little more flavour add more salt and sherry vinegar to taste.
